Banana Split Chicken

Recipe Description

Recipe Ingredients

2 tablespoons olive oil
4 pounds chicken parts
½ cup lemon juice
½ teaspoon salt
1 teaspoon pepper
Preheat oven 350°. Grease roasting pan with olive oil. Place chicken in pan. 
Top with lemon juice, salt and pepper. Bake 45 minutes to 1 hour.
Sauce:
½ cup brown sugar (packed)
1 cup orange juice
½ cup wine vinegar with garlic (or add garlic powder)
2 tablespoons soy sauce
3 tablespoons corn starch
1 large green pepper, cut in strips
1 medium onion, minced
2 bananas, peeled, split lengthwise and quartered
In saucepan combine juice, vinegar, soy sauce, corn starch. Blend well, 
cook over low heat, stirring constantly until thickened slightly. 
Add green pepper and onion, cook and stir for 5 minutes more. Add 
banana, cook for 1 minute. Pour mixture over chicken, bake 15 minutes. 
Serves 4 to 6.
