Blueberry Streusel Cake

Recipe Description

Recipe Ingredients

2 cups blueberries, washed and dried
2 1/3 cup all purpose flour
1 teaspoon cinnamon
1 ¼ cups sugar
½ cup butter
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon vanilla
1 egg
½ cup milk
fine grated rind of 1 lemon
dry bread crumbs
½ cup finely chopped walnuts

Instructions

Butter a 9 inch square baking pan, dust with bread crumbs. Combine 1/3 cup flour, cinnamon and ½ cup sugar. Cut in ¼ cup butter until mixture resembles coarse crumbs. Set aside. Sift together remaining flour, baking powder and salt. Place berries in bowl, sprinkle with 1 ½ teaspoons dry ingredients. Toss quickly, set aside. Cream remaining butter with remaining sugar, add vanilla and egg. Beat until fluffy. Stir in dry ingredients alternately with milk and lemon rind. Carefully fold in berries. Turn into pan, top with flour, sugar, butter mixture. Sprinkle with nuts. Bake at 375° for 35 to 40 minutes or until it tests done.
