Coconut Fudge Cake

Recipe Description

Recipe Ingredients

2 cups sugar
1 cup oil
2 eggs
3 cups flour (all purpose)
¾ cup cocoa
2 teaspoons baking soda
2 teaspoons baking powder 
1 cup hot coffee
1 cup buttermilk or sour milk
 teaspoon vanilla
½ cup chopped nuts
Filling
¼ cup sugar
1 teaspoon vanilla
1 package (8 ounce) cream cheese, softened
1 egg
½ cup flaked coconut
1 cup semi-sweet chocolate bits

Instructions

In small mixing bowl make filling. Beat sugar, vanilla, cream cheese and egg until smooth. Stir in coconut and chocolate pieces. Cake: Combine sugar, oil, eggs and beat. Add remaining ingredients; flour, cocoa, baking soda, baking powder, salt, coffee, buttermilk and vanilla. Beat at medium speed 3 minutes. Pour half the batter into pan, add filling, pour remaining batter into pan. Bake at 350° for 70 to 75 minutes.
