Cranberry Fruit Nut Bread

Recipe Description

Recipe Ingredients

2 cups sifted all purpose flour
1 cup sugar
1 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
¼ cup shortening
1 teaspoon grated orange peel
¾ cup orange juice
1 well beaten egg
1 cup fresh cranberries, coarsely chopped
½ cup chopped nuts

Instructions

Sift together dry ingredients. Cut in shortening. Combine peel, juice and eggs. Add to dry ingredients mixing just to moisten. Fold in berries and nuts. Turn into 9 X 5 X 3 inch greased loaf pan. Bake at 350° for 60 minutes. Cool. Wrap and store overnight. Freezes well.
