Fish Fillets Almandine

2 lbs. fish fillets
3 tablespoons oil
½ cup matzo meal
3 tablespoons butter
1 teaspoon salt
½ cup blanched almonds
pepper to taste
Instructions
Roll fish in a mixture f matzo meal, salt and pepper. Heat the oil and butter in a large skillet. Fry fish until browned on both sides, about 5 minutes to each side. Remove fish and keep warm. Fry almonds in the remaining fat until lightly browned. Add additional butter if necessary. Place fish in greased pyrex dish, pour almonds over same and bake 10 minutes at 350°. Same recipe can be prepared and baked without frying. Bake fish in 350° oven for 20 minutes.
