Gazpacho
Recipe Description
Recipe Ingredients
In a large wooden bowl, finely chop the following ingredients:
1 cup unpeeled, diced cucumber
8 ripe tomatoes, peeled and diced
2/3 cup diced onion
2 cloves garlic, crushed
1 cup green pepper, chopped
Then add:
½ cup olive oil
½ cup wine vinegar
4 cups tomato juice
2 teaspoons salt
½ teaspoon black pepper
Refrigerate. Serve very cold in chilled bowls. Hint: totmato juice may be frozen in ice cube trays and added at serving time.
