Meringue Cookies

Recipe Description

Recipe Ingredients

Note: everything (including utensils) must be room temperature
2 egg whites
½ cup sugar
1 small package chocolate chips (6 ounce)
¼ cup chopped nuts
½ teaspoon vanilla

Instructions

Melt chocolate on top of double boiler. Beat egg whites stiff in bowl. Gradually beat sugar into egg whites. Fold chocolate, nuts, coconut carefully into meringue mixture. Drop by teaspoons onto greased cookie sheet. Bake 12 to 15 minutes at 300°. Remove from sheets carefully and immediately, using sharp spatula. Cool on rack. May be frozen. ½ cup coconut may be substituted for the nuts.
