Passover is a special time of year for those who celebrate it. It is a time to reflect on the freedom and liberation of the Jewish people from slavery in ancient Egypt. As part of the Passover tradition, many people abstain from eating leavened bread, which can make meal planning a bit challenging. However, with a little creativity, you can still enjoy delicious and healthy meals during this time. One simple yet flavorful idea is seared salmon with vegetables. This recipe is not only Passover-friendly, but it’s also a great way to get your daily dose of protein and vitamins.
Seared Salmon with Vegetables Recipe:
Ingredients:
4 salmon fillets
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
2 cups mixed vegetables (such as bell peppers, zucchini, and carrots), sliced
1 lemon, sliced
Instructions:
Preheat your oven to 400°F.
Season the salmon fillets with salt, pepper, garlic powder, and onion powder.
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets to the skillet and cook for 3-4 minutes on each side, until seared.
Remove the salmon fillets from the skillet and place them on a baking sheet lined with parchment paper.
Add the sliced vegetables to the same skillet and sauté for 5-7 minutes, until they are tender.
Arrange the vegetables around the salmon fillets on the baking sheet.
Place a slice of lemon on top of each salmon fillet.
Bake in the preheated oven for 10-12 minutes, until the salmon is cooked through and the vegetables are slightly browned.
Serve hot and enjoy your Passover-friendly and delicious seared salmon with vegetables!
